Traditional Rataouille
I know I did the fancy movie ratatouille earlier, but I have to admit, while not as pretty, this version tastes better, and its still fairly quick, easy, and healthy =)
Ingredients:
1 can diced tomatoes
1 onion
1 zucchini
1 eggplant
6 cloves garlic
herbs as desired, I used basil
Instructions:
1. Mince the garlic and dice the rest of the vegetables, I prefer kind of chunky but it really depends on taste
2. Sautee garlic in olive oil until cooked, just a couple of minutes
3. Add onions and sautee until they go translucent
4. Add tomatoes. Let simmer for about five minutes
5. Add zucchini and eggplant, cover and simmer on low heat for 10-15 minutes. Season as desired
Serve over rice =)
